II. How to Brew
• Vietnamese phin filter
• 25g ground coffee (about 2 tablespoons)
• 150ml hot water (92–96°C / 197–205°F)
• Condensed milk or sugar (optional)Steps:
1. Place 25g of ground coffee into the phin filter.
2. Gently press with the filter press (don’t compress too tightly).
3. Pre-wet the grounds with 20ml of hot water. Wait 30 seconds.
4. Add the remaining 130ml of hot water and cover the lid.
5. Wait 5–7 minutes for the coffee to drip slowly.
6. Enjoy black, or add condensed milk/ice for a traditional cà phê sữa đá.

Our memories of Khe Sanh are probably based on the image of a white rice meal with “water soup” costing less than 1000 VND (at that time) of ethnic minority households in Chan May Pass – Huong Phung – Huong Hoa – Quang Tri. Some “richer” families had additional dishes of wild vegetables picked from the garden. Children with sparkling eyes and bare feet in the harsh weather. Those images ignited a deep love in our hearts. That is why Khe Sanh was also the first place to initiate the annual program “WARM CLOTHES FOR CHILDREN”. 

Having been involved with Khe Sanh coffee since 2017, SHIN Coffee’s love for Khe Sanh coffee and the people here has never diminished, but has even grown deeper.

After contacting the government to present our desire to form a cooperative to help people in Khe Sanh grow better coffee, we were fortunate to connect with World Vision – and Mr. Hiep was the bridge, as well as supporting us a lot in the process of working with farmers, connecting with the government to establish Chan May cooperative in Khe Sanh. Marking the first step in developing the raw material area here.

SHIN Coffee, together with the Van Kieu ethnic people in Chan May Hill, have experienced many memories with coffee trees. From the days when the coffee trees were as bare as cassava plants until they regained their souls, we had to work very hard together. The barren, stunted coffee plantations like cassava stems have turned into lush, green Arabica coffee gardens. The hands of Van Kieu men now not only know how to play gongs, amam trumpets, achung lutes… but also skillfully and meticulously take care of the coffee trees so that they produce many berries. The lips of Van Kieu girls still sing the “cha chap” tune or the “sim” folk song every day, while diligently weeding and catching worms in the young coffee beds.
